Upside-down Red Anjou Pear Cake with Spelt Flour (Vegan)

Super delicious quick and easy winter cake! NOM!

Prep time: 10- 20 mins

Cook time: 30-40 mins

Serving size: 8

Items you’ll need:

  • Cake pan (I use a 9 inch round pan)
  • Coconut oil spray
  • Vegan butter
  • 1 cup of Unsweetened Vanilla Almond Milk
  • 2 TBS maple syrup
  • 1 TBS Apple Cider Vinegar
  • 1/4 cup vegetable oil (I used avocado oil)
  • 3/4 cup organic sugar plus more covering bottom of pan
  • 1 small lemon (zested and juiced)
  • 2 TBS ground flax and 4 TBS warm water (optional, I have done the recipe with or without the flax eggs)
  • 2 1/4 cup Spelt flour
  • 2 tsp Baking powder
  • pinch of salt
  • 2 Red Anjou pears
  • Coconut butter (optional, for garnish)

Directions:

  1. Preheat oven to 350° F
  2. Cover the bottom of your cake pan with a generous layer of vegan butter
  3. Spray the sides of the pan with coconut oil spray
  4. Sprinkle the bottom of the pan with a layer of organic sugar
  5. Cut your pears in half and take out the seeds
  6. Place your pears cut side down in the cake pan and set aside
  7. In a small bowl create your flax eggs- 2 TBS ground flax with 4 TBS warm water (this step is optional, I have done it with or without and loved it either way) then set aside
  8. In a medium mixing bowl add in your wet ingredients-  almond milk, maple syrup, apple cider vinegar, avocado (or other veggie) oil, lemon juice, flax eggs, and sugar
  9. In a large mixing bowl combine your dry ingredients- spelt flour, baking powder, lemon zest, and salt
  10. Gradually fold in your wet ingredients to your dry until thoroughly combined
  11. Pour your batter into your cake pan with your pears and be sure to tap the pan on a hard surface to rid your cake of potential air pockets
  12. Bake your cake for 30- 40 minutes or until golden brown and a knife inserted comes out clean
  13. Let your cake rest for 15 minutes then pop it out onto a plate
  14. Drizzle with coconut butter (optional)
